Raw American clover honey. Never heated, never blended across lots.
Clover is the honey most people picture when they think of honey — pale gold, mild, floral, clean on the finish. It's the one that doesn't argue with anything. Good on its own, good in tea, good on toast, good in a recipe where you want sweetness without a strong personality taking over.
This is a summer harvest, pulled when the clover is running. The bees work clover alongside other blooms in the same fields, which is what gives this honey its light color and strong sweet aroma. It comes from a family beekeeping operation.
We pour it into jars here in Las Vegas in small batches, a case at a time. It's also the base we use for our Lavender Cinnamon and Elderberry Cinnamon honey infusions — same honey, same jar, just infused.
Most honey on a grocery shelf has been heated hard and filtered clear, which makes it pretty and shelf-stable and removes most of what made it worth eating. This is the other thing.
Honey is sold by weight rather than fluid volume. It's denser than water, so a container that holds 8 fluid ounces of liquid holds roughly 12 ounces of honey.
Light amber, thick, with a soft floral aroma.
Raw honey crystallizes over time. That's a sign of real, unheated honey rather than a flaw. Stand the glass jar in warm — not boiling — water and stir it back to liquid. The bear bottle takes warm water too, just not hot water or a microwave. Store at room temperature; refrigeration speeds crystallization up.
Do not feed honey to infants under 12 months.

Storage: Lid on tight, room temperature, out of direct sun. Don’t refrigerate — cold speeds crystallization. Honey doesn’t spoil.
If it crystallizes: Set the jar in a bowl of warm water for 15–20 minutes and stir. Skip the microwave, and skip boiling water — both undo what makes it raw.

A family apiary in Wisconsin, harvested at the end of July. They've been keeping bees since 2004 and run about a thousand hives, moving them seasonally to follow the bloom. This is a single harvest from a single operation — not a blend of lots from different suppliers.
Clover is the main source, but the bees also work linden, alfalfa, and wild grasses growing in the same fields. That's normal for real varietal honey — bees don't read signs. The mix is what gives this one its light color and strong sweet aroma.
Honey is one of the most adulterated foods in global trade, and most of what sits on American shelves is imported. Ours is American, single-origin, and traceable to one apiary and one harvest month. No, and almost no American honey is. The USDA has never finalized organic standards for beekeeping, and the ones certifiers do apply require a forage zone of untreated land larger than nearly any US beekeeper can offer. Most honey carrying an organic seal in American stores is imported. We'd rather tell you the apiary, the state, and the month than point at a label.
It might, and that's a good sign. Crystallization is what real, unprocessed honey does. Warm the jar in a bowl of warm water and stir it back.
Strained, not filtered. Wax and debris come out. Fine filtering strips the pollen along with them, so we don't.

Yes. Clover is mild enough to swap into most recipes without changing the flavor. High heat will dull the aroma, so add it late when you can.
