Raw clover honey from a family apiary in Wisconsin. Never heated, never blended across lots.
Clover is the honey most people picture when they think of honey — pale gold, mild, floral, clean on the finish. It's the one that doesn't argue with anything. Good on its own, good in tea, good on toast, good in a recipe where you want sweetness without a strong personality taking over.
This is the midsummer harvest, pulled at the end of July when the clover is running. The bees work clover alongside linden, alfalfa, and the wild grasses in the same fields, which is what gives this honey its light color and unusually strong sweet aroma. It comes from a family beekeeping operation started in 2004, now running around a thousand hives.
We pour it into jars here in Las Vegas in small batches, a case at a time. It's also the base we use for our Lavender Cinnamon and Elderberry Cinnamon honey infusions — same honey, same jar, just infused.
Most honey on a grocery shelf has been heated hard and filtered clear, which makes it pretty and shelf-stable and removes most of what made it worth eating. This is the other thing.
Light amber, thick, with a soft floral aroma. Because it's raw, it may crystallize over time — that's a sign of real honey, not a flaw, and it stirs back easily in warm water.
Do not feed honey to infants under 12 months.

Storage: Lid on tight, room temperature, out of direct sun. Don't refrigerate — cold speeds crystallization. Honey doesn't spoil.
If it crystallizes: Set the jar in a bowl of warm water for 15–20 minutes and stir. Skip the microwave, and skip boiling water — both undo what makes it raw.

No, and almost no American honey is. The USDA has never finalized organic standards for beekeeping, and the ones certifiers do apply require a forage zone of untreated land larger than nearly any US beekeeper can offer. Most honey carrying an organic seal in American stores is imported. We'd rather tell you the apiary, the state, and the month than point at a label.
It might, and that's a good sign. Crystallization is what real, unprocessed honey does. Warm the jar in a bowl of warm water and stir it back.
Strained, not filtered. Wax and debris come out. Fine filtering strips the pollen along with them, so we don't.

Yes. Clover is mild enough to swap into most recipes without changing the flavor. High heat will dull the aroma, so add it late when you can.
