Whole dried Lavandula angustifolia buds — English lavender, the variety grown for culinary use. Selected for vibrant aroma, deep color, and a clean floral flavor without the harsh camphor edge that makes cheaper lavender taste like soap.
Lavender is assertive. Used well it is beautiful in tea, shortbread, syrup, honey, and lemonade. Used heavily it takes over everything. The single most useful thing to know about cooking with lavender is to start with less than you think.

Why English Lavender
Not all lavender is culinary. Lavandula angustifolia — English lavender — is lower in camphor than French or Spanish varieties and lavandin hybrids, which is exactly why it is the one used in food. Higher-camphor lavender is what people mean when they say lavender tastes soapy.
How to Brew
Use ½ to 1 teaspoon of buds per 8 oz cup — far less than you would use of chamomile or mullein. Pour water just off the boil over the buds and steep 3 to 5 minutes, then strain.
Do not steep longer hoping for more flavor. Lavender's volatile oil releases fast, and past about five minutes the camphorous notes come forward and the cup turns perfumey. If it tastes soapy, you used too much or steeped too long — almost always one of the two.
Baking
Grind the buds with a little of the recipe's sugar before adding them. This distributes the flavor evenly and stops anyone biting into a whole bud. Start with about a teaspoon of ground lavender sugar per standard batch and adjust from there.
Ways to Use
Tea and blends — lavender pairs beautifully with chamomile at about three parts chamomile to one part lavender. Also: shortbread, scones, and cakes; lavender syrup for lattes and lemonade; infused honey and butter; cocktails; and sachets, soap, and home fragrance.
