Whole dried Lavandula angustifolia buds — English lavender, the variety grown for culinary use. Selected for vibrant aroma, deep color, and a clean floral flavor without the harsh camphor edge that makes cheaper lavender taste like soap.
Lavender is assertive. Used well it is beautiful in tea, shortbread, syrup, honey, and lemonade. Used heavily it takes over everything. The single most useful thing to know about cooking with lavender is to start with less than you think.
Flavor
Floral • Lightly sweet • Herbal • Slightly resinous • Concentrated
Ingredients
Organic dried lavender buds (Lavandula angustifolia). Culinary grade. Single-ingredient. No additives, flavorings, or fillers. Naturally caffeine-free.
Why English Lavender
Not all lavender is culinary. Lavandula angustifolia — English lavender — is lower in camphor than French or Spanish varieties and lavandin hybrids, which is exactly why it is the one used in food. Higher-camphor lavender is what people mean when they say lavender tastes soapy.
How to Brew
Use ½ to 1 teaspoon of buds per 8 oz cup — far less than you would use of chamomile or mullein. Pour water just off the boil over the buds and steep 3 to 5 minutes, then strain.
Do not steep longer hoping for more flavor. Lavender's volatile oil releases fast, and past about five minutes the camphorous notes come forward and the cup turns perfumey. If it tastes soapy, you used too much or steeped too long — almost always one of the two.
Baking
Grind the buds with a little of the recipe's sugar before adding them. This distributes the flavor evenly and stops anyone biting into a whole bud. Start with about a teaspoon of ground lavender sugar per standard batch and adjust from there.
Ways to Use
Tea and blends — lavender pairs beautifully with chamomile at about three parts chamomile to one part lavender. Also: shortbread, scones, and cakes; lavender syrup for lattes and lemonade; infused honey and butter; cocktails; and sachets, soap, and home fragrance.

Use ½ to 1 teaspoon of buds per 8 oz cup — much less than you would use of most herbs. Pour water just off the boil over the buds and steep 3 to 5 minutes, then strain.
Do not steep longer hoping for more flavor. Lavender's volatile oil releases quickly, and past about five minutes the camphorous notes come forward and the cup turns perfumey. If your lavender tea tastes soapy, you almost certainly used too much or steeped too long.
Grind the buds with a little of the recipe's sugar before adding them. This distributes the flavor evenly and prevents anyone biting into a whole bud. Start with roughly a teaspoon of that lavender sugar per standard batch and adjust upward from there.
Combine equal parts sugar and water, bring to a simmer until dissolved, remove from heat, add 1–2 tablespoons of buds, cover, and steep 20–30 minutes. Strain and refrigerate. Keeps two to three weeks and works in lattes, lemonade, and cocktails.
Lavender pairs beautifully with chamomile at about three parts chamomile to one part lavender — and stay close to that ratio, since lavender dominates quickly. Lemon, honey, and rosehip also work well.
Yes. This is Lavandula angustifolia — English lavender — selected for culinary use in tea, baking, desserts, syrups, and beverages. Not all lavender sold is intended for food; this is.
Three causes, and they are all fixable. Too much lavender, too long a steep, or the wrong variety. Higher-camphor lavenders — French, Spanish, and lavandin hybrids — taste noticeably more medicinal than English lavender. Drop to ½ teaspoon per cup and pull it at three to four minutes.
Floral and lightly sweet, with a herbal, slightly resinous character and a cool finish closer to rosemary than to a flower. It is far more concentrated than most herbal teas, so a little goes a long way.
Half a teaspoon to one teaspoon per 8 oz, steeped 3–5 minutes. This is roughly a quarter of what you would use of chamomile. Start at the low end — you can always add more next time.
English lavender (Lavandula angustifolia) is lower in camphor and is the culinary standard. French and Spanish lavenders and lavandin hybrids carry more camphor, which reads as medicinal or soapy in food. That is why the species on the label matters.
Grind the buds with some of the recipe's sugar first, so the flavor distributes and nobody bites into a whole bud. Start with about a teaspoon of that lavender sugar per batch of shortbread or scones.
Chamomile is the classic pairing — about three parts chamomile to one part lavender. Lemon, honey, rosehip, and vanilla all work. Avoid pairing it with anything delicate, since lavender will bury it.
Yes. Culinary grade is simply a higher standard than craft grade, so it works for both. Many customers use the larger 1 lb and 2 lb sizes for soap making, sachets, and event favors.
Sealed, cool, dark, and dry, away from strong odors. Heat and light degrade the aromatic oils fastest — so not above the stove and not on a sunny windowsill. Properly stored, lavender holds its aroma for a year or more.
